Fabrica- Fitzroy

Fabrica is a very open and spacious café with a beautiful court yard out the front. This style is perfect for the area as they are located in the backstreets of Fitzroy, next to a cute little market. The staff are so lovely and are always down for a chat.

Crushed Avocado

> Crushed Avocado served with Meredith Gippsland goats cheese, house made beetroot slaw, poached egg on pumpkin bread <

Any avocado dish is tough to perfect in Melbourne, as you want to stand out, but not in a bad way. I believe Fabrica have done a very good job of standing out, whilst keeping the flavours intact and ensuring nothing is too overpowering or out of place. The avocado was super smooth and had a perfect ratio of avocado and lemon. The goats cheese worked nicely with the flavours and textures of the avocado and added a more savoury flavour to the dish. The beetroot slaw was probably the best addition to this dish. It really made the dish stand out and gave it a nice sweet flavour to help break down all the other elements. To top it all off, the pumpkin bread was a perfect bed for all of these delicious elements as it added an incredible savoury flavour and was not tough to cut as well.

Chocolate Waffles

> Death By Chocolate Waffles- house made waffles served with vanilla ice cream, mini oreos, house made brownies, chocolate ganache, honeycomb, chocolate flakes, salted caramel sauce & raspberries <

These waffles, OMG, I’m actually obsessed. The flavour of the waffles was incredible and they are extremely fluffy. The vanilla ice cream melted into the texture so nicely and added a nice refreshing element to the dish to break down the rich flavours. The mini oreos are such a cute addition and add a nice sweet flavour to the dish because all the other sweet elements were ‘chocolate sweet’ but not ‘sweet sweet’. The brownie was probably the best part of the dish. It was very light but the flavour was absolutely incredible! It was not too sweet, but at the same time it was super chocolatey. The chocolate ganache was a nice moosey consistency and was not rich or overpowering. The honeycomb and salted caramel sauce made this dish stand out as it added a sweet but savoury element to the dish, which worked well with the ganache and ice cream. Raspberries and chocolate are an obvious marriage so of course the flavours blended nicely and added a refreshing element to the dish. The flavour combinations of this dish are so different, but everything just works so perfectly! If I could eat anything for the rest of my life it would probably be this dish!

Mushrooms On Toast

> Mushrooms on toast- medley of sautéed mushrooms served on brioche toast with chilli scrambled eggs + mushroom dust <

This mushroom dish is on their specials menu and I was highly recommended it by the owner, so of course I was going to try it! Scrambled eggs and mushrooms are my two favourite elements for any decent breakfast meal, so I was so excited to try it. The scrambled eggs were cooked to perfection and were not overcooked, nor undercooked. They were nice and creamy and worked so well with the thick and sweet slice of brioche toast, which was nice and crispy. The mushrooms were a stand out in this dish because there is so many on the plate and were sautéed perfectly. Overall, I was extremely satisfied with this dish and would 100% recommend it to anyone who wants a decent and filling meal!

Overall, I really enjoyed my experience here as the food and service exceeded my expectations. I would definitely rank this café in my top 10, if not higher!
