Forest Mushrooms AND Smashed Thai Pumpkin AND Berry Hotcake

Another location where I wouldn’t normally think of to try for breakfast is Ringwood North. There aren’t too many café options in Melbourne’s eastern suburbs, so to find a decent one that stands out is a real bonus. Hidden behind a small group of shops, Rubiki is a welcoming café with friendly staff and a really nice spacious atmosphere. They focus on high quality, fresh, and organic goods. Everything is made with love and is presented beautifully. The menu is quite extensive and there is a large focus on both breakfast and lunch options.

The vibes I got from this café were really positive, from the moment we walked through the door to the moment we left. We really enjoyed our feast and would definitely come back if we are in the area.

Forest Mushrooms

> Forest Mushrooms- enoki, portabella, field & oyster mushrooms sautéed with fresh thyme on seeded sourdough with a sweetened red wine reduction monte au buere <

Mushrooms on toast has always been a favourite of mine. Usually there is not much flavour, or the flavour comes from the toast. This mushroom dish, however, was an overall win for me. The mushrooms were really soft and cooked to perfection. They were also quite sweet and had a really strong and delicious flavour. The red wine reduction added almost a sweet smoky flavour to the meal, which made the mushrooms pop even more. The quantity of mushrooms on the dish was crazy but I felt like I was in heaven; you can never have too many mushrooms on a plate! Being such a large dish, it was quite filling but very satisfying. I would definitely recommend trying this!!

Smashed Thai Pumpkin

> Smashed Thai Pumpkin with goats cheese & sage on dark rye <

So we have seen the classic smashed pumpkin, but Rubiki have decided to put their own twist on it. With a Thai flavour infused in the pumpkin, it is a bit sweet and spicy, which intrigues you as to what you are actually eating, but the overall sense is it tastes like a genuine Thai meal. The pumpkin chunks are a perfect size for each bite, or you could even spread it over the lightly toasted rye bread. Rye was a good choice to combine with the pumpkin as the flavour combination balances each other out. The sage was a great touch to add a complementing flavour, whilst also enhancing the presentation. The feta on this dish, OMG, as soon as I tasted it I felt like I was in heaven! The feta is super creamy and just melts as soon as it touches your tongue. This kind of feta was perfect to balance out the spices of the pumpkin. With the lime squeezed over the top, the dish was complete.

Berry Hotcake

> Berry Hotcake with mixed berry compote & vanilla mascarpone <

As the hotcake arrived at our table, I could already smell the sweet and creamy aromas that were about to melt in our mouths. The hotcake is a perfect size compared to most others around Melbourne which have become excessive just for the presentation. The plating of this dish was actually quite cute, with the jam and cream in a small jar, next to the maple syrup in a pourer. The hotcake itself was really fluffy and had a strong buttery flavour. The berries added a nice sweet/sour flavour to each bite, which I really enjoyed. The syrup poured over the top added a lot of moisture to the hotcake, which soaked in really nicely to enhance the sweet flavours. The cream and jam combination was such a cute idea. Spread across the hotcake, the fluffiness of the cream complemented the cake really well, while making each bite more filling. Usually sweet dishes are overdone, but this meal was probably my favourite out of the three we tried! Everything about it was amazing, so if you’re craving something sweet and hearty, I would highly suggest trying this meal.
