Gravity Waffles
> Gravity Waffles with vanilla and white chocolate, whipped cream, kiwi fruit, strawberries, salted caramel & popcorn <
You’ve probably seen these waffles a million times on your Instagram feed and there’s good reason why! The presentation is out of this world and Collective deserve all the posts possible for this creation. It’s not just a pretty dish, the flavours are so strong and the waffle is super fluffy. The vanilla and white chocolate waffle flavour was sooooo good and you could really taste the flavours from the white chocolate peak through. The kiwi fruit and berries were perfect to add a bit more flavour and substance to the dish as it complemented the sweeter flavours present. When demolishing the caramel and popcorn I was taken back to my childhood. The popcorn reminded me of going to the movies with my family and demolishing an entire bucket of popcorn. The caramel was a perfect touch to enhance the sweetness and make the popcorn a treat on its own. When you brunch here, you cannot miss out on the opportunity to demolish this beauty!

Crumbed Mushroom Mac & Cheese
> Crumbed Mac & Cheese w/ mushrooms- Mac & cheese croquette, mushrooms, green cheese sauce & ranch dressing <
Who doesn’t like a decent mac n cheese?! Rolled into a crumbed ball and fried is the only way I can eat it now! A perfectly crispy and not too oily ball filled with gooey and cheesy macaroni. The filling was incredible and I had to go back for more. This is a perfect side dish to order if you want to try it but have your eye on one of the other amazing menu items. The mushrooms were only on the outside but were cooked perfectly as they were juicy and rich with flavour.

Poke Bowl
> Poké Bowl- Smoked salmon, turmeric rice, avocado, edamame & corn w/ a citrus soy dressing <
Are poke bowls becoming a thing of the past?? I haven’t seen too many around lately, but I guess it is because of the weather and people want more of a warmer and heavier kind of meal. This poke was quite standard, however, instead of raw sushi salmon, they used smoked salmon which I wasn’t too much of a fan of because it has a completely different flavour. Everything else in the bowl was refreshing and a great energy boosting meal.

Southern Fried Chicken Burger
> Southern Fried Chicken Burger with red cabbage & green chili slaw & tasty cheese on a brioche bun w/shoestring fries <
Can you tell I have had a recent obsession with burgers? If I see a burger on a menu I have to give it a try, no matter how big it is I will try and demolish every crumb. This one sounded particularly interesting because it was fried chicken inside the burger. Fried chicken can go 2 ways. The first way is it could taste like a schnitzel and be crumbed amazingly. The second way is it could be a very thick and crispy crumb that you would see on wings. When I took the first bite I knew it was the schnitzel crumb. My mouth started to water and I knew I was going to smash that burger. the red cabbage was a good element to break down the dry flavours from the chicken and added a really nice crunch to the burger. The cheese topped off the burger as it melted onto the chicken, creating heaven between two perfectly fluffy and sweet buns. The fries were perfect to add into the burger or have as a snack on the side. I cannot wait to try the beast burger here because this one set the expectations really high!
